Preparing Gbegiri with Uncle Favour's Peeled Beans
Gbegiri soup is a popular soup in the western part of Nigeria. Here's how to make it:
Ingredients:
- 2 cups of Uncle Favour's Peeled Beans
- 2 cooking spoons of palm oil
- 2 medium onions (chopped)
- 2 large red bell peppers
- 3 Scotch bonnet peppers
- 2 tablespoons of ground crayfish
- 2 seasoning cubes
- Meat or fish (optional)
- Salt (to taste)
Instructions:
1. Rinse the beans in cold water and soak for about an hour or two in water.
2. Boil the beans in a large pot with enough water for about 30 minutes or until it’s soft.
3. Using a hand blender or a blender, blend the cooked beans to a smooth paste and set aside.
4. While the beans are simmering, place the onions, peppers, and crayfish in a blender and blend to a fine paste.
5. Heat the palm oil in a soup pot over medium heat.
6. Add the chopped onions and sauté until translucent.
7. Pour in the pepper and crayfish mixture, seasoning cubes, salt to taste, and cook for about 5-7 minutes until the mixture thickens.
8. Add the blended beans to the pot and mix everything together.
9. Adjust the consistency by adding more water if it’s too thick or letting it simmer for a few more minutes if it’s too thin.
10. Cover the pot and let it cook for another 10 minutes.
11. Taste and adjust seasoning if needed.
12. Serve hot with your favorite accompaniments such as amala, pounded yam, or eba.
